The bungs came today from Barrel Builders. They're the silicone Ferm Rite bungs. They're breathable in that they have a one-way system that allows gas to escape, releasing pressure in the barrel and thereby preventing buckling or blowing out your bung, but preserves the air seal. So, they're for us during 2dry fermentation. i also had thrown in a couple of solid silicone bungs, since we have a stable wine now. All free of charge.
We're also using FlexTank ullage preventers. Neat devices that eliminate headspace.
I also received an updated 2006 Liquor laws for Ohio from Lexis nexis free of charge. I need to go through it and copmpare it to 2005's and update our crib sheet.
Should look at labelling regulations too.
Anton can do the bank account set up on Friday.
Mike will order the LLC kit.
Mike has the tax forms that we can fill out so he can apply for the Tax ID on-line.
This coming weekend will see filling of the last barrel, cleaning of the "blue barrels" and final clean of the basement winery. That done, fit in the commercial sink, then it's apply for that winery license.
