This time the half of the operation using new equipment went as planned, no hiccups requiring ad hoc creativity to overcome. As usual, what slowed us down was the clean-as-you-go method since we don't have the luxury of excess equipment.
Also, dealing with end quantities of a varietal had us juggling between different sized containers in order to make up 100% filled containers to elimate air/ullage.
We did it though.
We expect fermentation to kick in again even thought he specific gravity is bang on target - being just under or on 1.0. See, who needs to add stuff? Amateurs!
