Pool, Pie and ..? Of sulfiting and lost sandals





( Mike, Anton, Paolo) So, scales, yes. There you go. I think we deserve quite a few clicks on our site in consideration of Mike's Charity Work. I wonder what type of education he's given them? Maybe some grape stomping this fall would be a nice activity for them?
Anyway, we sulfited. Eventually. It took us all day to finally get to those barrels and re-test them for winepH and free sulfites. We then went to calculate the dosage but got caught by our sensitivity to customer needs and the fact that we don't want to muck the wine around with adding stuff to it like everyone else does.
We had gotten it into our heads that 50ppm free sulphites was the organic standard, but checking it further revealed (shock.horror!) that the standard is a staggering 100ppm. That said, we adjusted to 95ppm so we can leave the wine alone and not risk its ruin.
The ullage preventers again amazed us, and the silicone bung from Barrel Builders is fantastic.
So we had a good day - lots of food, pie and pool and also a fire. I would not be denied my eccentricity and did end up shovelling wood into the barbecue. Everyone liked the chicken that got done over the wood coals though.
Also scraped out a bocce court and we played that. Kids sort of approached the game more from the shot put point of view. Looks like the Via Vecchia bocce team will make itself felt at Ohio Italian-American festivals this year.
And as usual, Mike manages to lose something - this time his kids each lost a single sandal, which despite hunting with a flashlight for quite a while only turned up this morning on the stairs.
